Boston Catering & Events Recipe of the Week
Corn Fritters

3 cups Oil for Frying
1 cup Shifted All-Purpose Flour
1 tsp Baking Powder
½ tsp Salt
¼ tsp White Sugar
1 Egg, slightly beaten
½ cup Milk
1 T Shortening, melted
1 (12oz) can Whole Kernel Corn, drained

1. Heat oil in a heavy pot or deep fryer to 365 degrees
2. In a medium bowl, combine the flour, baking powder, salt & sugar
3. Beat together the egg, milk and melted shortening & stir into the flour mixture
4. Mix in the corn kernels
5. Drop fritters batter, by the spoonful, into the hot oil and fry until golden brown. Drain on paper towels
