Sunrise Tacos

1 large Tomato, Chopped
2 Green Onions, thinly sliced
2 tsp Finely Chopped Jalapeno Peppers
4 Eggs
2 Egg Whites
6 Flour Tortillas (6 inch), warmed
¾ cup Mexican Style Finely Shredded Four Cheese
½ cup Cilantro

1. Combine tomatoes, onions & Jalapeno peppers in a bowl
2. Whisk together the eggs & egg whites until blended
3. Pour the eggs into a large skillet & cook on medium heat, 2 to 3 minutes or until soft, stirring occasionally
4. Spoon eggs onto tortillas; top with cheese, tomato mixture & cilantro
5. Fold in half & serve
